Do we have any guacamole lovers on the site?! It seems that everyone has been obsessed with this yummy and delicious avocado-based dip! It seems almost impossible to dislike this superfood based dip! Well, what if we told you that you could combine this awesome dip with chicken and created a masterful blend of tastes that will have your taste buds going wild! Forget chips and dip when you can make this awesomely healthy dish for dinner instead.
Ingredients
4 small boneless, skinless chicken breast
1 ripe avocado
¼ tsp. ground black pepper
¼ tsp. salt
2 tbsp. diced red onion
¼ cup chopped tomato
¼ tsp. ground cumin
1 tsp. lime juice
¼ tsp. chili powder
¾ tsp. salt
½ tsp. garlic powder
2 large eggs
2 tsp. lime zest
1 cup plain planko breadcrumbs
Directions
Preheat your oven to 400 degrees F.
Grabbing the chicken breasts, tenderize them by using a mallet to pound into a thinner more flatter version and then set the pieces aside
Rid the avocado of its peel and seed and then place it in a medium sized bowl and mash it using a fork. Then comes the fun part, add in the onion, tomato, lime juice, and 1/2 teaspoon of salt. Mix it all together
Begin by evenly distributing the guacamole onto the chicken pieces and then roll them up, starting with the skinnier sides. Use a toothpick to keep the rolled up chicken slice together
In another bowl, whip together the eggs
In another bowl, toss in the breadcrumbs with the lime zest, garlic powder, chili powder, cumin, 1/4 teaspoon salt and pepper. Stir it all together
Place the stuffed chicken in the eggs, then place the chicken into the breadcrumb mixture.
Grabbing a baking dish, place the chicken side by side and let bake for approximately 30 minutes
